Ketogenic ham and egg cups are a staple for a low carb eating plan. They are portable and warm easily but also taste good cold on a road trip or hike.
Ham
Ham tends to contain sugar. Use caution when sourcing your ham.
Goat Cheese
Using goat cheese in this recipe allows for a dairy-free option but might not comply with all ways of eating.
Spices and Veggies
You can change up the spices and greens used in this recipe and tailor it to your liking. My go-to is diced spinach and peppers because they taste great with the goat cheese.
Ham Egg Cups

Ingredients
- 12 Large Eggs
- 12 Slices Deli Ham, uncured
- 2 Ounces Goat Cheese, plain
- 1 Cup Spinach, fresh chopped
- 1 Salt and Pepper to taste
- 1 Turmeric, ground optional
Instructions
- Preheat oven to 375° F / 190° C
- Lightly grease 12 muffin pan with a nuetral flabored oil like Avocado oil
- Line each well of the pan with a slice of ham, pressing down gently to form a cup
- Sprinkle chopped spinach in to each cup, evenly
- Crumble goat cheese into each cup. Note* goat cheese is strong, a few crumbles in each cup goes a long way.
- Season with salt, fresh-cracked pepper and turmeric(optional)
- Add 1 egg into each cup
- Bake at 375°F / 190°C for 18-25 minutes, depending on how you want your egg yolks.
- Serve with a side of leafy greens and avocado slices for a complete breakfast.
