Italian Keto Skillet
This Ketogenic Italian skillet complies with Whole 30 and other whole food plans. This skillet came together after a large harvest of zucchini and has become a regular meal in our rotation. I love meals that take 30 minutes or less and this is definitely one of them. Adding in fresh garlic and minced onion keeps it light and full of flavor.
Zucchini
Zucchini has become a star vegetable with low carb, paleo, and ketogenic diets. Spiralized, the substitute noodles when sauteed or added to soups. Sliced thin and blanched, they make lasagna layers come together. Diced, you can add them to eggs for a filling meal.
Grass-fed Beef
Beef raised only on grass contains two to three times the amount of conjugated linoleic acids (CLAs) compared to grain-finished beef. CLAs are healthy fats known to reduce the risk of cancer and shown to have better cholesterol levels. The ratio of omega-3 to omega-6 fatty acids are healthier than grain-finished beef in addition to higher levels of antioxidants. For those who are insulin-resistant, grass-fed beef has been shown to improve blood glucose levels. (1)
Tomatoes
Tomatoes are higher in carbs and sugars which means they need to eat with strict moderation. Technically they are a fruit but contain about 2-3 grams of net carbs per 100 grams. They are rich in fiber as our zucchini, cucumbers, and avocado.

Italian Keto Skillet

Ingredients
- ½ cup Fresh Basil Chopped
- 1½ Tbsp Olive Oil Extra Virgin
- 2-3 clove Garlic minced
- ½ cup Onion diced. May reduce to ¼ cup to lower carb count
- 1 medium Tomato
- 2 medium Zucchini sliced, halved and quartered
- 1 pound Ground Beef
- Salt and Pepper to taste
Instructions
- Brown and crumble ground beef in a skillet. Once finished, remove from pan.
- Drizzle olive oil to remaining beef fat. Allow to heat before adding garlic and onions. Cook for 2 minutes
- Add zucchini and tomato, cook until zuccini is tender.
- Return beef to skillet, sprinkle with basil, salt and pepper to taste. Cook for another 5 minutes or until basil has cooked down.
