Keto Dulce de Leche
What is dulce de leche? Its definition declares “a dessert caramelizing sugar in milk” and I love creating this recipe to enhance a dessert to stay on track with my wellness journey.
How do we get to this point and not use actual sugar? Well, by starting with some sugar-free sweetened condensed milk made with Bocha Sweet.
Bocha Sweet
Finding Bocha Sweet was an amazing surprise. It didn’t irritate my digestive tract and the results in my condensed milk were satisfying in texture. For some time, I used golden monk fruit but the milk always became very thick once cooled and the monk fruit would crystalize. Running granular monk fruit through a blender before preparing helped but did not provide the texture needed. Using allulose gives a better texture but still tasted, well, off. Bocha Sweet provides a better texture and caramelizes well.
How Often Can I Have Dessert?
Just because it’s labeled with your eating lifestyle doesn’t mean we should eat them daily. In every way of eating, you will find “junk food” I’ve heard others state, “Well it’s _______ (insert Vegan, Paleo, Gluten-Free, Sugar- Free, Keto, Low Carb, etc.) so it must be ok” While a dessert may fall within the parameters of any eating lifestyle, the frequency of consumption needs to be used with discretion.

Equipment
- Saucepan
- Heavy bottom cook pot
- Whisk
- Jar with lid
Ingredients
- ½ cup Bocha Sweet Can substitute with other sweeteners but results may crystalize once cooled.
- 2 tbsp Butter
- 2 cup Heavy Cream
- 1 tsp Vanilla bean paste can substitute vanilla extract
Instructions
Sweetened Condensed Milk
- Combine, heavy cream, butter, and sweetener. Stir to combine ingredients. Cook over medium heat. You do not want to speed the heating process.
- Simmer over medium heat, stirring on occasion until mixture bubbles up and then begins to thicken. About fifteen (15) minutes
- Remove from heat, stir in vanilla and allow to cool for 10 minutes.
- Whisk condensed milk mixture to ensure no clumps have formed.
Carmel aka Dulce de Leche
- Preheat oven to 400°
- Pour condensed milk into a small glass jar and cover with aluminum foil.
- Place the covered jar in the center of a small baking pan. Fill with water ⅔ of the way.
- Bake for one (1) hour. Carefully remove from oven, uncover and stir with a spoon. Mixture may bubble up. Recover and place back in the oven for another thrity (30) minute before checking again.
- Remove from oven when you see milk reaches a hue of caramel to your liking. Allow to cool for 30 minutes before transferring to a cooling rack.
- Store in an airtight container up to 7 days in refrigerator.
