- 1 Tbsp Cream Cheese, softened
- 8 Tbsp Butter, softened
- 1/2 Cup Allulose
- 2 Tsp Vanilla
- 2 Large Eggs, room temperature
- 2-3 Drops OOO brand Sugar Butter Cookie flavoring or similar brand
- 2 Tbsp Egg White Protein Powder
- 2/3 Cup Almond Flour, finely ground
- 1/2 Tbsp Gelatin, grass-fed
- 2 Tbsp Coconut Flour
- 1/2 Tsp Salt
- 1/2 Tsp Baking Powder
Toppings
- Sugar-Free Caramel Sauce
- Sugar-Free Milk Chocolate
Creating Your Keto Twix Cake Cookies
- Dry Ingredients: Whisk almond flour, coconut flour, egg white protein powder, baking powder, and salt to create an even mixture.
- Combine: Beat butter, cream cheese, and allulose until light and fluffy, about 2-3 minutes. Your mixture will become very light, almost white in appearance. Don’t forget to scrap the sides as you beat the mixture to ensure all is incorporated evenly.
- Wet Ingredients: Add eggs, vanilla, and OOO Butter Cookie flavoring. The butter cookie flavoring is optional but creates the best cookie flavor. Mix just until the eggs are incorporated into the batter.
- Combing: Gradually mix the dry ingredients in two batches, ensuring a smooth dough.
- Chill: Wrap the dough and refrigerate for at least 1 hour for easier handling.
- Shape: Form the dough into balls or larger portions for a Crumbl-like experience.
- Freeze: Freeze the dough balls until the oven is preheated to 375°F for 8 minutes.
- Optional: If you want your cookies shaped into perfect circles, you can use a large open lid or cookie cutter and swirl it around the cookies when they first come out of the oven to reshape them.
- Cool and Top: Once the cookies are cooled, top with a teaspoon of caramel and then follow that with a teaspoon of melted chocolate on top. I heat my chocolate in the microwave on half power for 50 seconds before stirring and continuing to microwave at 50% power for an additional 15 seconds.

Ingredients
Cookie
- 1 Tablespoon Cream Cheese
- 8 Tbsp Butter, softened
- 1/2 Cup Allulose
- 2 Tsp Vanilla
- 2 Large Egg room temperature
- 2-3 Drops OOO Sugar Butter Cookie flavoring or similar brand
- 2 Tablespoon Egg White Protein Powder
- ⅔ Cup Almond Flour, fine powder
- 1/2 Tbsp Gelatin, grassfed
- 2 Tbsp Coconut Flour
- ½ Tsp Salt
- ½ Tsp Baking Powder
Toppings
- 12 Tbsp Sugar Free Caramel
- 3 Ounces Sugar Free Milk Chocolate
Instructions
Cookie
- Combine the almond flour, coconut flour, egg white protein powder, baking powder, and salt. Whisk to evenly distribute the mixture.
- Combine butter, cream cheese, and allulose to a bowl and beat for at least 4 minutes and mixture has lightened to almost white.
- Add the eggs, butter cookie flavoring and vanilla, mix just until incorporated.
- Slowly add half the dry mixture, mix for 30 seconds, then add the remaing dry mixture.
- Wrap dough in plastic wrap and place in the refrigerator for at least 1 hour.
- To bake, roll dough into 12 balls or 4 large cookies for Crumbl-like size.
- Place the cookie dough into the freezer while preheating the oven to 375℉
Toppings
- If your caramel is very stiff, place in a glass jar or bowl and place in a hot water bath prior to topping your cookies.
- Spread the caramel into the center of your cookie. Using the back side of a spoon spread to the edges. Place in the freezer while you prepare the chocolate.
- Next, melt your sugar free chocolate and spoon onto the top of each cookie. Allow chocolate to set before serving.
