Instructions
Preheat oven to 375° F / 190° C
Lightly grease 12 muffin pan with a nuetral flabored oil like Avocado oil
Line each well of the pan with a slice of ham, pressing down gently to form a cup
Sprinkle chopped spinach in to each cup, evenly
Crumble goat cheese into each cup. Note* goat cheese is strong, a few crumbles in each cup goes a long way.
Season with salt, fresh-cracked pepper and turmeric(optional)
Add 1 egg into each cup
Bake at 375°F / 190°C for 18-25 minutes, depending on how you want your egg yolks.
Serve with a side of leafy greens and avocado slices for a complete breakfast.
